Is there anything else I can use for the egg white to make it safer?

If you'd like to use an egg white but don't want the risk of food borne illness, you can opt for ultra pasteurized egg whites in the carton to ensure safety.  **Make sure it's only egg whites - avoid any yokes for the best drink

Is there a vegan alternative?

Yes! If you are vegan or just don't want to use egg whites, you can use aquafaba.

What is aquafaba?

Aquafaba is the drained liquid from canned chickpeas. It has great foaming properties.  Use about 2-3 tablespoons of aquafaba for every egg white.
