This Empress Gin French 75 classic cocktail has color-changing abilities and is made from gin, sparkling wine, lemon juice, and simple syrup.

What is Empress 1908 Gin? Empress 1908 Gin is a butterfly pea flower infused gin. This allows the gin to change color from bright, indigo hue to a light pink or purple when exposed to acid like lemon juice.

Step 1: Add simple syrup to cocktail shaker with Empress 1908 gin.

Step 2: Strain into a champagne flute or coupe glass and layer in the lemon juice. Watch the color change before your eyes!

Step 3: Top with sparkling wine and a lemon peel.
