Notes
Measurements to make a batch of 8:
1 ½ cups pumpkin puree
2 ½ cups orange juice
½ cup lemon juice
1 cup triple sec
1½ cups tequila (silver or blanco)
roughly 25 dashes orange bitters
Orange peel and/or cinnamon sticks for garnish
Pumpkin pie spice and granulated sugar for rims
How to Make a Big Batch:
Add the ingredients to a blender (without ice) to really blend in the pumpkin puree before adding it to a serving pitcher. You don't want clumps of pumpkin floating around in the pitcher.
Serve in cocktail glasses over ice.
If the pitcher sits out for a while, make sure to stir it up if the pumpkin settles to the bottom, or give it another whirl in the blender.
Making a Batch Ahead:A batch can be made up to one day in advance and kept in the fridge until ready to serve. Before serving, use the blender technique outlined above to ensure the pumpkin doesn't clump.
