This recipe takes everything great about the classic rum cocktail and puts on a citrusy and blue hue twist. It’s a fun way to mix things up, whether you’re making a single drink or a batch for a party.
Lime slices and/or extra mint for garnish(optional)
Instructions
Add the fresh mint and simple syrup to a highball glass.
Gently muddle the mint with the syrup.
Add ice then add the white rum, blue curacao, and lime juice to the glass.
Top with soda water and gently stir, moving the spoon up and down the glass to evenly distribute the flavor.
Garnish if desired.
Notes
To make homemade simple syrup:
Combine 1 cup of water and 1 cup of granulated sugar in a saucepan and bring to a simmer.
Whisk the sugar until full dissolved.
Remove from heat and allow to cool.
Keeps in fridge for up to 3 weeks.
To make a pitcher of 8 drinks, you’ll need:
15-25 leaves fresh mint
½ cup simple syrup
1 ½ cups white rum
1 cup blue curaçao
½ cup lime juice
About 2 cups soda water
Add the mint and simple syrup to a pitcher that can hold at least 50 ounces. Muddle gently with a long muddler or a long wooden spoon.
Add the rum, blue curacao, and lime juice to the pitcher.
Stir and chill in the fridge for up to 1 day if making ahead.**
When ready to serve top with soda water and stir again.
Serve with lime slices and extra mint, if desired.
**If making ahead, remove mint leaves from pitcher and add back fresh leaves right before serving. Also, do not add lime slices in advance - both fresh mint and lime slices may make the cocktail bitter if left to sit overnight.
