Thanksgiving Smashed Brussels Sprouts

This recipe includes super crispy brussels sprouts finished off with balsamic glaze, pepitas, and cranberries. It’s the perfect side dish for Thanksgiving.

Why smash the sprouts?

More surface area for caramelization and crisping during roasting. This equals better flavor and texture.

Cook Time: 30min

Ingredients

Fresh brussels sprouts Olive oil Parmesan cheese Salt and pepper Balsamic glaze Roasted pepitas (pumpkin seeds) Dried cranberries

Boil sprouts in salted water until slightly softened - about 15 minutes. The submerge in ice water to cool. Pat dry.

Step 1

Place on baking sheet and gently press down on each sprout with a heavy bottomed cup until slightly flattened. Toss with parmesan cheese, salt, and pepper. Then roast.

Step 2

Once roasting is complete, drizzle with balsamic glaze and top with pepitas and dried cranberries.
