Smoky Chicken Enchiladas

These smoky adobo chicken enchiladas are an easy dinner idea that can get food on the table fast. This recipe uses liquid smoke and chipotles in adobo sauce to add a rich smoky flavor instead of spending the day smoking chicken.

Tomato sauce Garlic powder Onion powder Chili powder Adobo chipotle  Chicken broth Shredd chicken Black beans Corn kernels Bell or poblano pepper Liquid smoke Tortillas Shredded cheese Toppings


Make the sauce by blending tomato sauce, garlic/onion/chili powder, chipotle pepper, and broth.

Mix chicken, black beans, corn, peppers, and liquid smoke. 

Add half of the sauce and cheese.

Fill tortillas with chicken mixture and place seam side down in a greased casserole dish. 

Cover with remaining sauce and cheese. Bake for 30 minutes.

Top with your favorite toppings such as cilantro, avocado, sour cream, salsa, etc.
