Loaded Potato Leek Soup with Kale

This loaded potato leek soup recipe with kale is the perfect creamy comfort fall recipe to warm you up on a cold, blustery day. It’s hearty, nutritious, and flavorful – not to mention easy to make! 

Can you freeze or make potato soup ahead of time? Yes, but there are specific steps to take to ensure the soup doesn't separate.

Simply make the soup to the point prior to the addition of milk and kale. It then can be frozen for up to 3 months.  Once the soup is thawed, milk and kale can be added to ensure the best texture. 

Step 1: Cook bacon until crispy. Cook the onions and leeks in a little bit of the bacon fat until softened.

Step 2: Add potatoes, garlic, and stock and simmer for about 20-25 minutes.

Step 3: Reduce heat and add milk. Puree the soup until smooth.

Step 4: Stir in chopped kale and cook until kale is wilted.

Step 5: Load the soup with crumbled bacon and your favorite toppings like cheese, chives, sour cream,  etc.
