Buffalo  Chicken Bowls

This Buffalo Chicken Bowl is one of the easiest meals you can put together. It’s a great option for meal prep for the week and makes an easy lunch or dinner.

Rice Cabbage slaw mix Plain Greek yogurt Mayo Apple cider vinegar Honey Garlic powder Dried dill Shredded chicken Buffalo wing sauce Avocado Cilantro


Cook rice to package instructions.


Make the dill dressing with yogurt, mayo, vinegar, honey, grarlic powder, and dried dill.

Toss the dressing with the slaw mix.

Toss shredded chicken with buffalo wing sauce.


Layer each bowl with cooked rice, slaw, buffalo chicken, avocado, and cilantro.

Bonus tip for meal prep or reheating: To bring leftovers for lunch or reheat later, store the chicken and rice in one container that can be reheated. Keep the cool, crisp slaw, avocado, and cilantro in another. Once the chicken/rice is reheated add to the slaw mixture.
