Creamy Chicken Enchilada Soup

This Creamy Chicken Enchilada soup is warm, slightly spicy, and so comforting.  Loaded with veggies and chicken in a creamy enchilada broth, it's the perfect quick dinner idea. 

Step 1:  Heat oil in large soup pot and add onion, garlic, and chipotle peppers

Step 2:  Add stock, enchilada sauce, black beans, corn, spices, and cooked, shredded chicken breast. 

Simmer  for 20  minutes.

Step 3:  Add extra stock to a blender with cream cheese.   Add to soup and  cook 5  minutes  longer.
